If you wish to use the King Arthur recipe below, which I recommend for beginners, it will require more starter than I have on Benny’s yellow instruction card.
Please change the “Day 5” instructions to:
Discard down to 50 grams, feed 130  grams water and 130 grams gluten-free flour. Wait 5-8 hours for Benny to reach his peak and be ready to help you make your dough. After using 259 grams of starter for this recipe you will be left with 51 grams of starter to feed and maintain.
